Bruschetta-esque Breakfast Plate

If you know anything about my social media activity over the past few months, you'll know I have gotten really big on breakfast plates. I don't want to brag, but someone did refer to them as my famous breakfasts recently. I love making these plates because they allow me to be creative in what I'm eating because every week feels like a remix with the ingredients I have. In addition to that, these plates keep me full while also aiding in hitting my protein goals (currently 160 g/day). On top of everything, these plates are pretty and colorful and they make me excited to get up and make one every morning.


For my first installment of this mini series dedicated specifically to my breakfasts, I wanted to talk about my newest obsession- a take on bruschetta for breakfast. When I say 'a take' I am using the word loosely, there are some common ingredients and the overall vibe is similar.


For these plate posts, there are not so much 'recipes' as there are ingredients that I use that I think taste good together.


For the star of the show:

The Toast

  • Use cottage cheese as a base layer

  • Slice one plum tomato and layer it on the cottage cheese

  • Season with basil, salt, pepper, and a drizzle of balsamic vinegar

The Eggs

  • 3 different kinds on the week- scrambled, trad. sunny side up, and chili oil sunnies

  • Scrambled: I used 1 egg and 1/3 cup of egg whites along with some lite white cheddar cheese

  • Trad: Traditional sunny side up eggs. I made sure to cover the eggs with a lid to cook the top more while the yolk remained runny

  • Chili oil sunnies: As the name may imply, I cooked these two eggs sunny side up in some chili oil to give them a deeper flavor and a little kick

The Fruit

  • I used blueberries and a cut up banana with some peanut butter and topped with a little vanilla granola. I love blueberries with breakfast because they are full of antioxidants and aid in cognitive function.

The Meat

  • This week my breakfast meat of choice was maple chicken breakfast sausages from Trader Joe's. These breakfast sausages are sweeter, giving a nice contrast to an otherwise very savory plate.


To pair with all of these, I either made a brown sugar or cookie butter latte using Fairlife 2% milk (a protein hack if you are looking to boost your breakfast). Remember though- always drink a glass of water before you have your morning coffee! Your body will thank you.
